Organic Raw Sugar
Raw Organic Sugar is a coarse, sweet, and soluble carbohydrate ranging from light to medium brown. It is used as a sweetener in many dishes globally. In ancient times, honey was preferred to sweeten the food. Raw Sugar has been made in the Indian Subcontinent since antiquity and its cultivation then spread to Afghan countries.
Raw Organic Sugar is made from extracting the juices of Sugarcane. An ancient Chinese text from the 8th century BCE states that the use of sugarcane first started in India. However, sugarcane remained unimportant until India discovered to make granulated crystals from it in the 5th century. It was called Khanda at that time – the origin word for what we call ‘candy’.
Organic Raw sugar is a healthier alternative to white refined sugar. It is called Cheeni or Shakkar in Hindi, Khaand in Gujarati, and Panchasara in Malayalam.
To make Raw Organic Sugar, we need to cultivate sugarcane first.
Climate: Sugarcane is typically grown in tropical and subtropical regions with warm and humid climates.
Soil: Sugarcane can be grown in sandy-loam and clay soils with an efficient irrigation system and a pH between 5.5 and 8.0
Sowing: The seeds are planted in furrows or pits that are 2-4 inches deep.
Harvesting: You can know sugarcane is ready for harvesting once it grows 9-16 feet tall, the leaves become a deeper shade of green, and visible nodes start appearing on the stalk. Harvesting is done either manually by using machetes or with the help of machinery.
Milling: The sugarcane is pressed to extract the juice and it is separated from the fibrous material.
Evaporation: The extracted juice is clarified to rid it of impurities and is heated to evaporate excess water and form a thick syrup.
Crystallization & Centrifugation: The concentrated sugar syrup is cooled down until crystals are formed. Then, through the process of centrifugation, the crystals are separated from the remaining liquid
Drying: The obtained crystals are further dried to get rid of any remaining moisture. Once this is complete, we are ready with our Raw Organic Sugar.
Raw Organic Sugar can last up to 12 months if it is stored in an airtight container and placed in a dark place away from any moisture.
